It’s a recipe made famous by Cheesecake Factory, and my oh my, it’s worth the hype. Buttery soft salmon marinated in umami-laden miso paste and baked in the oven. Cheesecake Factory is well-known for its fantastic salmon dishes, and this is one of their biggest hits ever.
There are so many options when it comes to sides for this dish, but you can go in many directions, really. Try it with your favorite noodles or some egg-fried rice, or sit the salmon on top of a delicious salad.
Now and then, I get a glimpse of how easy some restaurant dishes are to make at home, and this is one of those dishes.
Ingredients you’ll need
Here is the list of ingredients you’ll need to make my version of this incredible plate of food:
- 2 TBS red miso paste
- 2 TBS maple syrup
- 2 TBS soy sauce
- 1 tsp minced ginger
- 1 tsp white vinegar
- 2 x 4oz / 114g salmon fillets, deboned, skin off
- 1 cup snow peas
- ½ cup dry sake
- 1/3 onion, finely chopped
- 1 stick of soft butter
- 1 TBS olive oil
- 2 TBS fresh coriander leaves



How to make miso salmon cheesecake factory version (step by step)
You’ll not be able to handle how simple this dish is. I mean, it’s a cinch.
There are basically 4 parts to making this dish: marinating the salmon, cooking the peas, cooking the salmon, and then making the sake butter.
Let’s get going!
Step 1:
Make up your marinade by combining the miso paste in a bowl with maple syrup, soy sauce, vinegar, and ginger.
Next, you will mix the paste with warm water to a thick consistency. Smother the salmon in the marinade and place it in an airtight container for 30 minutes. Keeping the fish in the fridge while it’s marinating is a good idea.
Step 2:
So first things first, pop that oven to 335°F/180°c.
Next, you’re going to blanch your snow peas in boiling water for 8 minutes. Drain off the water and run them under cold running water to stop them from cooking. Plunging them into a bowl of water and ice will produce a bright green color!
Step 3:
Once the salmon has marinated, it’s ready to bake. To avoid the fish sticking, line a roasting dish or tray with foil and brush it with olive oil. Lay the salmon on the tray and bake for about 13 minutes. The fish should be just slightly pink inside and look as though it will flake apart.



Step 4:
Prepare the sake butter while the salmon is in the oven—cook the butter and chopped onion in a little pot on medium heat for about 6 minutes. You’ll want to lower the heat if it looks like it’s going to burn – switch the dial down to low if it’s going that way. Once the onions have softened, add the dry sake and stir to combine. Season with salt and pepper.
When it comes time to devour this incredible salmon dish, pour over the sauce and serve the warm snow peas on the side. I like to shower mine with coriander leaves for some freshness at the end.
How to store miso salmon
Allow the fish to cool to room temperature before putting it in the fridge. For safety purposes, it’s best to always allow cooked food to come to room temperature before putting them into the refrigerator. Store the fish and all its glorious sauce in an airtight container in the fridge. Sealing it in a container will stop the onion and fish smell from fragrancing your entire refrigerator.
How to reheat salmon
This dish is awesome cold, but if you want to reheat it, that’s great too! The best way of reheating this dish is in the microwave for 2-3 minutes. If you bake it a second time in the oven, it will likely overcook before it heats to the center, so instead, pop it in the microwave if you have one.
