It’s an upbeat twist on a classic waffle. No, seriously, it’s a waffle made with glutinous sweet rice flour, also known as mochiko. All the other ingredients are total pantry staples.
Due to the stretch that the rice flour gives, it’s a chewier version of the classic waffle. They’re also gluten-free as a bonus for anyone out there searching for new gluten-free goodies to try.



Ingredients you’ll need
It’s baffling how simple this set of ingredients is for such a fantastic recipe; here it is:
- ¾ cups of oat milk (you can use dairy, almond, rice or another plant-based milk if you prefer)
- 1 large egg
- 1 ¼ cup sweet rice flour (mochiko flour)
- ¼ cup regular sugar
- 1 ½ tsp baking powder
- ½ cup pouring cream
- ½ cup chocolate chips
- 1 TBS butter
- 1 cup strawberries, halves
- Choc chip ice cream
How to make mochi waffle
Prepare to make the most delicious thing you’ve made in a while; here are the steps:
Step 1:
To make the batter, take out a mixing bowl. Add the sweet rice flour, baking powder, egg, sugar, salt, and oat milk. Whisk these ingredients together until smooth.
Don’t overmix the batter, or the waffles will turn out tough and too chewy. Mix it until everything is just combined.



Step 2:
Grease your waffle iron with cooking spray and heat it to very hot. When the machine indicates it’s hot, pour in the waffle batter until the surface is covered.
Close the lid and let it cook for 5-10 minutes until done. The waffles should have a lovely golden color. Remove the waffle and respray the iron. Cook the next lot and repeat.
Step 3:
Make the topping by melting the butter, cream, and chocolate together in a small pot. Stir the sauce ingredients until everything has melted together beautifully.

I love reheating my mochi waffles in a toaster. This is the simplest way for me, but there are other options.
