Easy Starbucks Cake Pop Recipe

I love the experience of popping into Starbucks, grabbing a coffee and a cake pop. Walking through town with a coffee in one hand and a cake pop in the other, going back and forth between them, is heaven to me. Here is my version of the Starbucks cake pop recipe, put together in a simple way so that anyone can make these at home. I hope you’ll love this recipe as much as I do!

What is a cake pop?

A cake pop can also be described as a cake lollipop. Basically, a cake pop is made with cake crumbs that have been mixed up with either icing sugar or melted chocolate. This mix is then rolled into spheres and dipped in a chocolate coating.

Colored white chocolate is often used as the coating for cake pops. The final step is to decorate them and then “pop” them onto a lollipop stick.

Cake pops are super fun to have and serve at parties or as a little after-dinner treat. They always look super cute as part of a display.

Ingredients you’ll need 

So as with all my favorite restaurant or eat-out dishes, I love figuring out how to recreate these at home. I’m pretty sure you do too! Here are the ingredients you’ll need to make a replica of the Starbucks cake pop recipe.

For the cake mixture:

  • 1 box of your favorite vanilla cake mix with frosting
  • 1 cup of milk
  • 3 large eggs
  • ½ cup sunflower or canola oil
  • 1 tsp vanilla extract
  • ½ tsp almond extract

For the coating:

  • 17 ounces of white chocolate chips or bark
  • 1 TBS sunflower or canola oil
  • 5 drops of pink food coloring
  • White sprinkles

Here are the steps to making your very own Starbucks cake pop recipe:

Step 1:

Set your oven to 350 °F. Grease and line a cake tin. Choose the size according to your box instructions.

Step 2:

In a large mixing bowl, mix together the cake mix, eggs, sunflower oil, vanilla, and almond extract. 

You’ll want to mix everything until it’s well-combined but not overmixed. Keep the box from the cake mix aside.

Step 3:

Pour the batter into the cake tin and bake it for about 25 minutes, until a sharp knife comes out clean when inserted. 

The other way to know the cake is baked is when you press it with your finger, and it springs back without leaving an indentation.

Step 4:

Cool the cake completely on a metal wrack. Once cool, cut away all the browned edges from all sides of the cake. Using your fingers, crumble the cake into a large bowl. This can also be done by pulsing it in a food processor.

Step 5:

Make up the frosting from the cake mix. Mix the vanilla frosting into the bowl of cake crumbs. It should be tacky enough to be able to roll into balls but not soggy and mushy.

Step 6:

Roll the cake and frosting mixture into balls. You’re going to want to freeze them on a lined baking sheet for an hour. 

Make sure they aren’t touching when you put them into the freezer.

Step 7:

You’ll need to make a stand for the cake pops to dry on. You can use the empty cake box as an easy option. Pierce little holes into the surface of the box.

Step 8:

When the balls are ready to work with, microwave your chocolate to melt it. Color it with the food coloring and mix in the oil.

Step 9:

Working for 3 or 4 cake pops at a time (keep the others in the freezer), push the lollipop sticks into the back of them. Next, dip them into the pink chocolate mix. 

Stand the little cake pops in the empty box by sliding each stick into one of the holes.

Tips for making the perfect cake pop

  • If you want to avoid drips from forming on the edges of the cake pops, tap the hand holding the stick gently. This should nudge the drop off the cake pop before it sets.
  • Try to avoid mixing the cake dough into the white chocolate. One way to do this is to make sure the cake you are working with remains frozen. The other way is just to dip the pop in and out of the chocolate quickly. Don’t swirl and twirl it around, which will encourage the cake to break up into the chocolate coating.
  • Use an airtight container to store your cake pops. Also, avoid having them touch each other when storing them.

How to store cake pops?

Cake pops can be stored in the refrigerator for around 2 weeks to 1 month. The best way to do this is in an airtight container. 

You can also keep them out of the fridge if your room temperature is relatively cool. In this instance, they will safely keep for about a week.

You can also freeze cake pops for about three months in a plastic bag in the freezer.
